Lemon and Basil Meatballs2013-03-07

This is a light refreshing recipe that gives you a real hit of zesty lemon and basil leaves. One of my favorites – great dish for Summer.
- 500 grams pork mince
- 500 grams veal mince
- 1 lemon (finely grated rind and 1 TBS of juice)
- 1 onion (grated)
- 1 cup breadcrumbs
- 1/3 cup of basil leaves (chopped finely)
- 1 cup chicken stock
- 2 x 400g tins diced tomatoes
Mix in a bowl all mince, lemon rind, onion and lemon juice, basil, breadcrumbs, salt and pepper until combined. Roll into balls (approximately 2 TBS each). Refrigerate for 15 minutes.
In a deep frying pan combine stock and tomatoes and slowly bring to the boil. Place meatballs into pan reduce heat to medium-low and simmer uncovered for 35 minutes.
Serve with spaghetti.
