Pork and Apple Meatballs

Ingredients

  • 800 grams pork mince
  • 1 onion (finely grated)
  • 1 clove garlic (crushed)
  • 1.5 green apples (finely diced)
  • 1 rash bacon (finely chopped)
  • 1 egg
  • 1 cup breadcrumbs
  • 1 cup red wine vinegar
  • 2 cups chicken stock
  • 6 slices orange peel
  • juice of 2 oranges
  • 3/4 cup brown sugar
  • 1 cinnamon stick
  • 6 star anise
  • 2 TBS butter
  • salt and pepper

Method

Step 1

In a large bowl mix mince, onion, garlic, apples, bacon, egg, breadcrumbs, 1 tsp salt and 1/2 tsp pepper. Refrigerate for 15 mins.

Step 2

In a bowl mix red wine vinegar, chicken stock, orange juice and peel, brown sugar, cinnamon stick, star anise, butter and some salt and pepper.

Step 3

Caramelize meatballs in large deep pan. Add bowl of vinegar/stock etc into frying pan and bring to the boil. Simmer on medium heat for 1 hour or until sauce thickens.

Step 4

Serve with baked or mashed potato.
