Zesty Eat-a-lot Meatballs

Ingredients

  • 400 grams beef mince
  • 250 grams veal mince
  • 250 grams pork mince
  • 1 onion (finely grated)
  • 1 rash bacon (finely chopped)
  • 3 button mushrooms
  • 3 cloves of garlic
  • 1 cup breadcrumbs
  • 1 egg
  • 1/3 cup oregano (chopped)
  • 1/4 cup basil leaves (chopped finely)
  • zest of half lemon (finely grated)
  • 1.5 TBS sugar
  • 2 x 400g tins diced tomatoes
  • 1 cup chicken stock
  • salt and pepper

Method

Step 1

Mix in a bowl all mince, lemon rind, onion, bacon, mushroom, garlic, basil, oregano, breadcrumbs, egg, sugar and some salt and pepper until combined. Roll into balls (approximately 2 TBS each). Refrigerate for 15 minutes.

Step 2

In a deep frying pan combine stock and tomatoes and slowly bring to the boil. Place meatballs into pan reduce heat to medium-low and simmer uncovered for 35 minutes.
